It’s the first day of Autumn. Leaves are already falling to the forest floor.
We started the day with a wholesome breakfast of bacon, eggs, sprouted grain toast and coffee.
Then we set off on an adventure.
We found ourselves among quaking aspens, goldenrod flowers and wild mint.
Along the trail, we found a lone violet.
And we spotted lots of mushrooms.
Lots of colorful mushrooms.
Medicinal turkey tail mushrooms…
And delicious chicken of the woods mushrooms…
My goal for the day was to gather Autumn Olive berries.
And that is just what we did.
We spent an hour or so pulling the berries from their branches, while the soft wind blew the leaves around and the crows cawed from the tops of the trees.
Once home we sliced up the chicken of the woods, along with onion and sauteed it in olive oil and sandwiched it between a flour tortilla and cheese. Lunch was chicken of the woods quesadillas.
While I cooked, Regan inspected the turkey tails.
This first day of Autumn has given us much to be thankful for.
