The Best Chocolate Cake


My birthday was yesterday. I awoke to a house decorated with balloons, banners and streamers. My husband sure knows how to make me feel special. Ethan’s morning greeting of “Happy Birthday Mom!” was heartwarming. The day was filled with well wishes and to top it all off, the best chocolate cake I’ve ever had, graced my lips and filled my belly after dinner.


This cake has a great texture, it is moist with the perfect amount of chocolate flavor.

Preheat oven to 350F. Grease two 8 inch cake pans.

Whisk the following ingredients together in a large bowl:

  • 2 cups sugar
  • 1 3/4 cups flour
  • 1 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt

In another bowl, combine:

  • 2 eggs
  • 1 cup milk
  • 1/2 cup canola oil
  • 2 teaspoons vanilla extract

Pour the milk mixture into the flour mixture and beat with a handheld mixer for 2 minutes.

Boil 3/4 cups water and add to the batter. Whisk until fully incorporated.

Pour into prepared pans and bake for 30-40 minutes. Mine were fully cooked right at the 30 minute mark.

Let cakes cool on a wire rack in pans for a few minutes, then turn out and let cool completely before frosting.

The cake pictured was frosted with mint frosting and decorated with Andes Candies. It was a great combination.
